Easter and spring are such a fun time to dive into the kitchen. Bright flavours, cute themes, and vibrant colours – it’s like a celebration that winter is over and the grey is behind us! So, I’ve compiled my best Easter and spring recipes into one place, to make it easy to browse. All of them are beginner friendly, and a few of them are gluten-free too. I tried to make sure there’s something for everyone. From cookies and brownies to cakes and cupcakes, this list is sure to help spark some inspiration for ya.

Robin’s Egg Macarons (gluten-free!)
Robin’s Egg blue macarons with Oreo crumbs and a rich dark chocolate ganache filling. They’re so pretty… and SO yummy… This may be one of my fav recipes ever.

Lemon Meringue Pie Cupcakes
What better way to welcome the new season than with some bright and fresh flavours? In my opinion, lemon is the perfect ingredient for adding a zesty kick to any recipe, and these lemon meringue pie cupcakes are no exception. They are light, fluffy, and bursting with tangy lemon flavour, making them the ideal treat for any springtime occasion.

Carrot Biscoff Cake
Ok I have to say I AM SORRY right off the bat here… I don’t have a recipe for the CAKE. Just cupcakes. But I can get the cake recipe out there if it’s wanted! Promise. Layers of carrot cake, covered with cinnamon cream cheese frosting, and finished off with Biscoff cookies and a Biscoff drip… ya. You want the recipe.

Micro Egg Brownie Cookies (gluten-free!)
I’m a big fan of brownies. Who isn’t, right?? So you can’t really go wrong with brownie cookies. With Easter just around the corner, I thought it would be fun to add some mini eggs for a festive touch, and Tyler found these cute micro mini eggs, which were the ideal size.

Cloud Macarons (gluten-free!)
A playful twist on traditional macarons, these treats are shaped like fluffy clouds, bringing a touch of whimsy to the classic French delicacy. “April showers bring May flowers” and all that, right??

Sugar Cookies with Royal Icing
These are the ultimate sugar cookie – thick and flavourful, with crispy edges and chewy centres. Perfect for the holidays, as they can be cut and decorated for any theme! I used a bunny-shaped cookie cutter, a carrot, and a chick for Easter vibes. OR you can do the Peeps look-alikes!

Coconut Mini Egg Cookies
Mini eggs are everywhere this time of year, and for good reason. They’re the quintessential Easter treat, and it feels kinda mandatory to have them around. That’s why I decided to incorporate them into my favourite chocolate chip cookie recipe to create these coconut chocolate chip mini egg cookies. An already delicious cookie with a lil added flair – yes please!

Bunny Macarons (gluten-free!)
Ok so I don’t have a recipe for these… but I swear it’s the same as the Robin’s Egg Macarons. You just don’t add the blue food colouring!! 🙂

No-Bake Chocolate Peanut Butter Easter Nests
Chow mein noodle nests? I know, I know – it sounds weird. But hear me out… These nests are sweet and salty, crunchy and smooth, and just all-around delicious. Plus, they’re incredibly easy to make; I’m talking, like, four ingredients and no baking required.

Mini Egg Nest Cake and Cupcakes
These ones aren’t so much recipes, as decorating ideas. Kinda works with any flavour of cake/cupcake! Just top your treat off with a piped nest using either a grass tip (for the cake) or an open star such as the Wilton 4B (for the cupcakes), and add mini eggs. CUTE!

Mini Egg Brownies
ONE MORE MINI EGG RECIPE for the rooooaddd! Simple, classic, delicious brownies, with an added touch of Easter. Not only do the Mini Eggs bring a nice colour pop to the brownies, they bring a light milk chocolate flavour to contrast the fudgey brownie; and a little crunch!

That’s all I got for you guys 🙂 Hop to it!! (Sorry, I had to…).
Happy baking!
