Simple, classic, delicious brownies, with an added touch of Easter. Not only do the Mini Eggs bring a nice colour pop to the brownies, they bring a light milk chocolate flavour to contrast the fudgey brownie; and a little crunch!
These brownies are made in one bowl, and can easily be done by hand. No stand mixer needed, minimal dishes to wash… a dream come true!

I like to use a mix of regular Dutch processed cocoa powder, and black cocoa powder to give these brownies an extra rich, deep chocolate flavour. I get mine from Bulk Barn! However, if you can’t find black cocoa, you can substitute with an equal amount of additional regular cocoa powder.
Mini Egg Brownies
Ingredients
- 1¼ cup melted butter
- 2½ cups brown sugar packed
- 4 eggs room temperature
- 1 tsp vanilla extract
- 1 cup cocoa powder
- ½ cup black cocoa powder
- ¾ cup flour
- 1 tsp salt
- ½ cup chocolate chips I prefer semi-sweet
- ½ cup mini eggs
Instructions
- Preheat oven to 350°. Line a baking pan with parchment paper, and spray with cooking spray. You can use a rectangular (8×11) or square (8×8 or 9×9) pan. The smaller the pan, the thicker the brownies will be. In the video, I used an 8×11 rectangular pan.
- Melt butter in the microwave. Add brown sugar while butter is hot, and whisk until the sugar starts to dissolve and the mixture becomes smooth.
- Add in eggs, whisking for 2-3 minutes until the mixture is light and airy.
- Add vanilla extract, cocoa powders, flour, and salt. At this point you may wish to switch to a spatula to mix, as the batter will become quite thick. Stir until the flour is just combined – you don't want to overmix.
- Fold in chocolate chips and mini eggs. These amounts are just suggestions: feel free to measure with your heart! Optional: sprinkle a few extra mini eggs and chocolate chips on top.
- Pour batter into baking pan, using a spatula to spread as evenly as possible. Bake time will vary depending on the pan used: for an 8×11, bake for 35 minutes; for an 8×8, bake for 40 minutes; for a 9×9, bake for 45 minutes.
- Allow brownies to set by allowing them to cool slightly before slicing into squares.
